Wild Salmon Skewers with Figs & Sage Honey

Ingredients

  • 2 x wild salmon fillets (www.vitalchoice.comor Wholefoods)
  • 1 zucchini
  • 4 fresh figs (dried black mission if not available)
  • sage honey(www.worldpantry.comor Wholefoods)
  • celtic salt
  • cracker pepper
  • 4 sprigs cilantro
  • bamboo skewers

 

Makes 2 portions

Wild salmon is rich in the omega 3’s which improves lubrication, circulation and neurological function. Figs not only have aphrodisiac qualities due to their suggestive shape, but they are also rich in potassium and magnesium which improves circulation and gets the blood moving to the penis and clitoris. Honey has been touted as a cure for sterility and impotence but it also contains B6, which optimizes testosterone production to enhance desire and arousal. Enjoy!

Method

  1. Soak bamboo skewers in cold water to prevent them from burning. Pre-heat the grill to a medium heat.
  2. Remove skin from wild salmon. Chop into bite sized pieces. Thinly slice zucchini into strips.
  3. Remove skewers from the water, start to thread the zucchini – just one layer, then add a cube of salmon and repeat until 5 cubes of salmon are on each skewer.
  4. Place under grill or pan fry. While the skewers are grilling, slice the figs length-wise. Add to frying pan and drizzle with sage honey. If figs begin to stick, add a small amount of water. Allow the figs to caramelize.
  5. Once salmon has cooked all the way through, serve on a white plate accompanied by the figs and sage honey. Dress with cilantro and drizzle honey on the plate to be consumed with the salmon.
  6. Serve with steamed French beans and pine nuts.

Chinese Herbal Soup

2 ounces Chinese herbs (such as astragalus, ginseng, rehmannia, codonopsis, ligustrum, burdock and shizandra berries)
1 tablespoon finely chopped fresh ginger
1/8 cup uncooked rice
4 cups soup stock
1 diced carrot
1 beet or 1 turnip, diced
1 diced yam
¼ cup shiitake mushrooms, slivered

Place the herbs (including ginger) in a muslin bag or tie them together with a string. Simmer the bag and rice in the soup stock for 1 hour.

Add the vegetables and mushrooms to the herbal stew, and simmer gently for another 30 minutes.

Remove the bag filled with herbs, and serve the soup.
